The day after returning from the farm, my oldest turned 8. He asked for a chocolate and mint pokemon cake. I really slaved over the 'Pokemon' part as you can tell. But the cake I made up and it turned out fantastic so I'm putting the recipe on here so I can refer to it!
Mint Chocolate Cookie Cake:

Bake a devil's food cake in two circular pans.
Cream together one block of cream cheese, and 16 oz. heavy whipping cream.
Beat in 2-3 cups powdered sugar.
Fold in 1 bag of crushed mint oreos.
Sandwich your cake and top with ganache!

Turning 8 comes with plenty of perks. One of them is joining cub scouts. Josh is the YM's prez, so Skye knows the young men really well, including these two brothers... Talon and Kyler.
They both received their eagle on Sunday, July 20th. They asked Skye if he would present the colors at their ceremony. How many cub scouts get to do that after 2 weeks of being a cub? It pulled at my heart strings a bit. What a cutie!
